Description
The Déglon Dumas sole knife is a French kitchen essential designed specifically for flat-fish preparation. The 17cm semi-flexible stainless steel blade keeps its edge through countless fillets. Riveted POM handle ensures hygiene and durability in professional kitchens.

**Precision on the Plate**
The thin blade slides beneath the delicate skin of Dover sole, separating each fillet with surgical accuracy. In your hands, a simple fish becomes an elegant dish worthy of the finest French brasserie.
**Heritage of French Cutlery**
Forged in Thiers, the historical capital of French knifemaking, each Déglon blade carries centuries of cutlery tradition. The riveted handle is built to withstand the rigours of professional kitchens across generations.

Looking After Your Blade
Keep your blade in top nick. Give it a rinse and dry after each use to stop corrosion. Every now and then, rub a thin coat of mineral oil along the blade. Sharpen with a whetstone or honing rod at a steady angle. Store it in a sheath, knife roll, or on a magnetic strip — never chucked loose in a drawer. For carbon and Damascus steel, give it a wipe after cutting acidic foods. For folding knives, clean out the pivot and pop a drop of lubricant in to keep it opening smoothly.
