Description

Tojiro's DP Santoku wraps a VG-10 core between soft stainless outer layers for an edge that's both razor-sharp and resistant to chipping. The 17cm blade nails all three virtues—slicing, dicing, and mincing—while the Pakkawood handle sits comfortably in a pinch grip. An essential Japanese kitchen knife for everyday prep.

Three Virtues in Motion

Rock the curved belly through a mound of fresh herbs—the VG-10 edge parts each leaf cleanly, releasing fragrance without bruising. Switch to a push-cut through daikon and the blade glides as if gravity alone does the work.

Morning mise en place becomes a quiet pleasure rather than a chore.

Seki City Precision

Forged in Seki, Japan's blade capital, Tojiro sandwiches a VG-10 core between softer stainless layers that shield the hard cutting edge from lateral shock.

The Pakkawood handle is resin-stabilised for moisture resistance, its dark grain echoing the understated style of traditional Japanese toolmaking.

Looking After Your Blade
Keep your blade in top nick. Give it a rinse and dry after each use to stop corrosion. Every now and then, rub a thin coat of mineral oil along the blade. Sharpen with a whetstone or honing rod at a steady angle. Store it in a sheath, knife roll, or on a magnetic strip — never chucked loose in a drawer. For carbon and Damascus steel, give it a wipe after cutting acidic foods. For folding knives, clean out the pivot and pop a drop of lubricant in to keep it opening smoothly.
