Description

The Robert Herder K2 paring knife features a remarkably thin carbon steel blade ground to a zero-edge for the sharpest possible cut. The hand-turned plum wood handle is lightweight and warm, built for extended use. Made in Solingen by one of Germany's oldest family-owned cutlers, this is a chef's secret weapon for precision prep.

The Zero-Edge Difference

Press the blade against a tomato skin and watch it sink through without pressure—the zero-edge grind parts the flesh as though it were giving way willingly. Peel a peach in one unbroken ribbon, the carbon steel following every curve.

At 40 grams, you forget the knife and remember only the cut.

Solingen's Quiet Master

Robert Herder has forged blades in Solingen since 1872, grinding each K2 paring knife to a zero-edge thinness that most manufacturers reckon is impractical—and their customers reckon is indispensable.

The plum wood handle is hand-turned on a lathe, its purple-brown grain unique to each piece, and left unsealed to develop character with kitchen use.

Looking After Your Blade
Keep your blade in top nick. Give it a rinse and dry after each use to stop corrosion. Every now and then, rub a thin coat of mineral oil along the blade. Sharpen with a whetstone or honing rod at a steady angle. Store it in a sheath, knife roll, or on a magnetic strip — never chucked loose in a drawer. For carbon and Damascus steel, give it a wipe after cutting acidic foods. For folding knives, clean out the pivot and pop a drop of lubricant in to keep it opening smoothly.
